KESANQUIN

Baijiu

It is believed that almost every ancient civilization has a history of alcohol production, including China. In its early stages, Baijiu was not exactly as we know it today; it was a more primitive, fermented mixture of various grains. When the Mongolians introduced distillation techniques from Persia and Central Asia in the 13th century (during the Yuan Dynasty), Baijiu as a distilled spirit truly began to emerge.

This evolution allowed it to express its defining qualities: Sharpness, Squareness, and Roundness.

ABOUT THE CREATORS

KESANQIAN BAIJU

The producers behind Kesanqian are among the refined artisans of the Chinese Baijiu tradition, dedicating themselves to the authentic Strong Aroma style (nongxiang). The master distillers combine centuries-old techniques with meticulous grain selection, utilizing a harmonious blend of five traditional grains: sorghum, glutinous rice, regular rice, wheat, and corn.

By fermenting all these grains together in historic clay-lined pit kilns, the makers create an exceptionally rich and layered flavor profile that unites both sweet, fruity notes and deep umami nuances.

What truly characterizes the makers of Kesanqian is their dedication to long-term, traditional aging processes and craftsmanship. They allow their distilled Baijiu to rest for several years in massive porcelain and earthenware jars, achieving a perfect balance between high alcohol percentages (such as 52%) and a surprisingly smooth, rounded structure.

With expressions like Kesanqian Wandu Duyou and Siling Qiuyue, the distillers demonstrate a mastery in translating traditional cultural heritage into world-class liquid elegance.
